Note to self: my strawberry cheesecake isn’t easy to make. I just wanted to try something fancy and experiment on more complicated recipes. More importantly, cheesecake takes a long time to make. So if you are looking for something fast and easy, this strawberry cheesecake recipe is not it. Make it on the weekends.
I remember back when I was 12, I made a terrible tasting cheesecake and my mother kept on reminding me of that incident. For that reason, I wanted redemption and a chance to better my baking skills. Baking, as you know, is not my forte. I was so confused when I saw the different variations of cheesecakes. Do I want to make a bake or no-bake cheesecake and what’s the difference?
The Difference between Baked and No-Bake Cheesecake
I came across this recipe for a no-bake cheesecake, and I was so disappointed when I tried it. After putting my strawberry cheesecake in the refrigerator overnight, I still got this gooey texture like mousse. My strawberry cheesecake didn’t freeze properly. The gelatin I used did not help the cheesecake set. It was not the cheesecake I was used to. I definitely did something wrong. Because of that, I went back to the drawing board and started researching cheesecake recipes. Consequently, I decided to bake my cheesecake in the oven for one hour and then freezed it for four hours. My strawberry cheesecake turned out fine and really, really good. It was rich, creamy and not too sweet. Not bad for a novice baker.

Strawberry Cheesecake
Delicious strawberry cheesecake is rich and flavourful thanks to condensed milk and yogurt.
Mix together butter with graham cracker crumbs and pat into springform pan
Refrigerate crust for 10 minutes.
In a large bowl, combine cream cheese, condensed milk and yogurt.
Divide cream cheese mixture into two separate bowls.
Melt strawberry powder into a cup of warm water and mix into one of the two bowls until it turns pink.
Pour the first layer of the cheesecake with the first bowl. Refrigerate for 10 minutes.
Pour the second layer of the cheesecake with the second bowl with the strawberry cream cheese. Refrigerate for 10 minutes.
Bake in oven for 1 hour at 325 degrees fahrenheit.
Cool in oven for 1 hour.
Freeze cheesecake in refrigerator for 4 hours or overnight.
Serve with berries.
