Best Hainanese Chicken Rice Recipe Ever!

Growing up, my favourite comfort food was Hainanese Chicken Rice. Whenever my parents took me to an Asian mall, I would always go for Hainanese Chicken Rice at the food court. Even now, I still crave it and often go to restaurants in Toronto like Vietnamese Delight to satisfy my cravings. Vietnamese Delight has an excellent Hainanese Chicken Rice recipe. What makes this the Best Hainanese Chicken Rice Recipe ever? Is it the moistness of the chicken or the flavourful buttery rice? I think it is the rice.

Eating out can be very expensive, which is why I started cooking more at home. I realized that I cannot afford to eat out constantly due to financial constraints. I bought this Hainanese Chicken Rice paste at a grocery store with ingredients like pandan, butter, chicken flavour and garlic. Hainanese Chicken Rice Recipe
This Hainanese Chicken Rice recipe is the ultimate comfort food. The rice is made flavourful thanks to the chicken broth and Hainanese Chicken Rice paste. Dip the chicken in sweet chili sauce.

  1. Give your chicken a nice exfoliating rub with the sea salt until skin is smooth and shiny. Wash off salt and marinate with soy sauce. Chill in fridge for 3 hours.
  2. Fill a large pot with two litres of water. Throw in the salt, ginger slices and spring onions. Put chicken breast side down and cook for 20 minutes on high heat.
  3. Turn off the heat and let the chicken simmer for another 20 minutes.
  4. Meanwhile cook the rice in a rice cooker. Once the rice is cooked, put the Hainanese Chicken paste into the rice and stir with the chicken broth.
  5. Check to see if the chicken is cooked entirely. If there is still blood, turn the heat back on and cook for another 10 minutes. Put the chicken in a bowl filled with ice and water.
  6. Serve with rice and sweet chili sauce. Enjoy!
