Chicken Enchiladas with Gochujang

I decided to turn this Mexican dish into an Asian fusion. I love the flavour of Gochujang, a salty fermented Korean hot pepper paste. You will love the combination of cheese, orzo pasta, chicken, and gochujang – this dish will satisfy even the pickiest of eaters.

Ingredients
  • 6 whole wheat tortillas
  • 1 1/2 pound chicken breast, cut into 1/2 inch slices
  • 2 red bell peppers, cored and deseeded
  • 1 jalapeno pepper, cored and deseeded
  • 225 g red lentil, green pea, and chick pea orzo pasta (PC blue menu)
  • 1 cup buttermilk
  • 1 cup gochujang
  • 1 tablespoon paprika
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground pepper
  • 3 cups sharp cheddar cheese or mozzarella cheese
Directions
  • Step 1 Marinade the chicken breast in buttermilk, garlic powder, onion powder, paprika, and ground pepper
  • Step 2 Stir the orzo pasta in a pot and simmer for 15 minutes until the liquid is absorbed. In a skillet, saute chicken breast, red bell peppers, gochujang, and soy sauce
  • Step 3   In a tortilla, wrap the chicken, red bell peppers, jalapeno peppers, orzo pasta, and cheese together
  • Step 4 Continue rolling the rest of the tortillas and place them in a 9×13-inch baking dish
  • Step 5 Sprinkle the cheese and gochujang on top
  • Step 6 Bake in the oven for 45 minutes until the enchiladas are golden brown.
