Cheddar Couscous Salad
My type of cooking is simple and affordable. Food is something I always budget for. For example, this Cheddar Couscous Salad is budget-friendly and super healthy. Eaten as a meal or side dish, this recipe satisfies any picky eater of the family.
Couscous on its own is rather bland, but you can jazz it up with feta, herbs and chickpeas. For my Cheddar Couscous Salad, I’ve added a splash of lemon juice, Kalamata olives, parsley and cheddar cheese. Cheddar Couscous Salad

Ingredients
- 3/4 cup couscous uncooked
- 1 English cucumber chopped
- 1/2 onion chopped
- 1/2 cup Kalamata olives
- 1 tomato quartered
- 4 teaspoons lemon juice
- 2 tablespoons olive oil
- 1 cup cheddar cheese
- Salt and pepper
- 2 tablespoons parsley chopped
Directions
- Step 1 In a pot, pour couscous into boiling water.
- Step 2 Once it’s cooked, fluff with a fork.
- Step 3 Stir in olives, onions, tomatoes, parsley, lemon juice, cucumbers and olive oil.
- Step 4 Season with salt and pepper.
