I know it has been a long time since I updated my blog but between work and studies, I haven’t had the time. But since today is my birthday (May 6th), I baked myself an Upside Down Apple Cake. I know it’s not a traditional birthday cake but I wanted to combine my love of apples with cake. Furthermore, this Upside Down Apple Cake is meant for me to satisfy my cravings for the delicious tartness of apples.
Anyway, I came across this jar of apple butter from and thought I might use it in my baking. Usually, the most popular way to make this cake is with caramel sauce but I used the apple butter because it’s subtly sweet with hints of cinnamon and brown sugar. I’m using Braswell’s Select Apple Butter from Loblaws. I don’t find this Upside Down Apple Cake overly sweet but if you want something sweeter, just add ice cream or caramel sauce. Enjoy!
Upside Down Apple Cake
Ingredients
- 1 Granny Smith apple, peeled and thinly sliced
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 2 eggs
- 1/3 cup milk
- 1 tablespoon vanilla extract
- 2 tablespoons butter
- 1 cup apple butter
- 1/3 cup brown sugar
Directions
- Step 1 In a large mixing bowl, combine flour, baking powder, eggs, sugar, vanilla extract and milk. Stir together and set aside
- Step 2 In a pan over medium heat, melt the butter, brown sugar and apple butter until mixture comes to a boil
- Step 3 Immediately pour the apple butter mixture into a round baking pan
- Step 4 Put sliced apples around the edges in a circular pattern. Repeat until the pan is completely covered
- Step 5 Pour the cake batter on top of the apples. Spread until smooth
- Step 6 Bake in oven for 25 minutes, then cool until bottom is slightly warm
- Step 7 Place round plate on top and flip quickly
- Step 8 Slice and serve with caramel sauce or ice cream
