Easy Sichuan Dan Dan Noodle Recipe
This Dan Dan Noodle Recipe combines my two great loves: noodles and chili oil. I always love spicy dishes with lots of chilis. A classic Sichuan comfort food, the Dan Dan noodle recipe is normally served in a thick red broth made with chili oil. My recipe came out less soupy and more like spicy spaghetti because of the rich sesame paste I’ve added. In addition, I’ve added yu choy (Chinese greens) and pork to finish off the dish. You will love the peanuty flavour combined with the chili oil for a little bit of heat.

Ingredients
- 1 pound ground pork
- 1 pound dried plain noodles
- 2 teaspoons oil
- 3 teaspoons sesame paste
- 1/2 cup chili oil
- 2 teaspoons Shaoxing cooking wine (you can get it at any Asian supermarket or Loblaws)
- 3 teaspoon dark soy sauce
- 450g Yu Choy
Directions
- Step 1 Mix together sesame paste, chili oil, soy sauce and Shaoxing wine in a small bowl and set aside
- Step 2 Boil the dried noodles in a pot
- Step 3 Bring the water to a boil and set aside cooked noodles
- Step 4 Briefly blanch the yu choy, drain, and set aside
- Step 5 In a pan, brown the pork in oil on medium heat
- Step 6 Add the sesame sauce, noodles and yu choy
- Step 7 Stir together and serve
