Banana Squares with Coconut Rum

My Banana Squares with Coconut Rum are a little treat you can have for breakfast or afternoon tea. It’s sweet but not too sweet. In addition, I added Malibu Coconut Rum to the recipe because I love the sweetness of the rum. Ever since I got back from the Bahamas, I wanted to use rum in my cooking. I just love the combination of bananas and coconut. It reminds me of a tropical paradise. Just be sure to go easy on the rum. You don’t want your banana squares to come out too moist or watery. Banana Squares with Coconut Rum

Bring home the tropics with Banana Squares with Coconut Rum.

Ingredients
  • 3 ripe bananas
  • 1 1/2 cup all-purpose flour
  • 1 tablespoon baking soda
  • Pinch of salt
  • 1/2 cup sugar
  • 1/3 melted butter
  • 1 large egg, beaten
  • 3/4 cup Malibu Coconut Rum
Directions
  • Step 1 Mash the bananas in a large bowl with a fork until completely smooth
  • Step 2 Stir in the melted butter
  • Step 3 Mix in the baking soda, salt, sugar and flour
  • Step 4 Add the melted butter and rum. Stir until creamy with no clumps
  • Step 5 Pour the batter into prepared aluminum foiled pan
  • Step 6 Preheat oven to 350 degrees F and bake for 1 hour
  • Step 7 Remove from oven and let it cool. Slice and serve.
