Spicy Beef Noodle Soup is the ultimate comfort food and can cure any ailment, including depression. Lately,  I was feeling depressed and could not leave the house. That is why I choose to make more of my favourite comfort foods at home. Normally, whenever I have a craving for Spicy Beef Noodle Soup, I would go to Mei Nung Beef Noodle House in Markham, Ontario. My special recipe is inspired by the classic Taiwanese beef noodle soup, and according to my brother, it is a restaurant quality dish! Just enhaling the aromatic broth infused with anise will instantly raise your spirit, as well as clear your sinuses.

I think you will enjoy my Spicy Beef Noodle Soup with my special spicy broth and chunks of beef. The marbled fat enhances the beefy flavour. When slow cooked for 90 minutes, the beef comes out tender. You can get the special Sichuan chili bean paste at any Asian supermarket. You will love the salty and spicy flavour that this chili bean paste adds to this Spicy Beef Noodle Soup recipe.

Spicy Beef Noodle Soup

Ingredients
  • 1 pound beef cut into cubes
  • 2 tablespoons cooking oil
  • 2 packages Vietnamese Rice Noodles
  • 6 cups water
  • 4 cloves garlic, minced
  • 1 chopped onion
  • 4 oz baby bok choy, quartered lengthwise
  • 2 stalks green onions, cut in sections
  • 1 tomato, sliced
  • 3 tablespoons Sichuan chili bean paste
  • 1 tablespoon chili powder
  • 1/4 cup Shao Xing cooking wine
  • 1/2 cup dark soy sauce
  • 5 star anise
Directions
  • Step 1 Chop beef into 1-inch cubes
  • Step 2 In a pot, blanch beef cubes to remove impurities and set aside
  • Step 3 In another pot, cook garlic and onions but do not burn them.
  • Step 4 Add the chili bean paste, ginger, green onions, star anise, soy sauce, Shao Xing cooking wine and water
  • Step 5 Put the beef cubes into the broth and cook for 90 minutes
  • Step 6 While the beef is cooking, cook the noodles and bok choy in a separate pot
