Today's Mother's Day and I baked some delicious brownies for my mom. I never thought of myself as a baker but I like to feature something sweet once in a while. It's no secret that I love chocolate and I found this brownie recipe by Nigella Lawson really easy to make. I've added instant coffee to this recipe because it enhances the flavour of the cocoa power, resulting in a more chocolately taste. Try it and you'll see what I mean.

  • 2 teaspoons unsalted butter
  • 3/4 cup brown sugar
  • 3 teaspoons cocoa
  • 3 teaspoons all purpose flour
  • 3 teaspoon instant coffee
  • 1 teaspoon maple syrup
  • 2 large eggs
  • 3/4 cup dark chocolate chips
  • 2 cup chopped walnuts
  • 1 - 8
  • Step 1 In a small saucepan, heat together the butter, maple syrup and brown sugar. Gently stir until the butter has melted and sugar has melted. Set aside
  • Step 2 In a small bowl, blend the cocoa, flour, coffee and salt. Add to the butter mixture and gently stir.
  • Step 3 Add the egg, chocolate chips and walnuts to form a chocolate batter
  • Step 4 Pour batter into an aluminum foil pan
  • Step 5 Preheat oven to 350 degrees Fahrenheit
  • Step 6 Bake for 15-20 minutes until the top hardens
  • Step 7 Let it sit for 30 minutes and serve
