Friday night is pasta night for me. I got some Mizithra Cheese at a local cheese shop and it tastes delish! Mizithra is Greek cheese made with milk and whey from sheep and goats. I’ve decided to use it tonight for my special Brown Butter Pasta with Mussels to add a little saltiness.  For all pasta lovers out there, this dish is a crowd-pleaser.

Brown Butter Pasta with Mussels and Mizithra Cheese

Ingredients
  • 1 bag frozen mussels
  • 8 oz artisanal Italian spaghetti
  • 3 teaspoons butter
  • 1 teaspoon chopped garlic
  • 1 cup Mizithra Cheese
  • 2 teaspoons olive oil
  • 1 teaspoon tomato paste
  • 1/2 cup kalamata olives
Directions
  • Step 1 Cook pasta in boiling water until al dente, about 8 to 10 minutes. Set aside.
  • Step 2 Heat olive oil and garlic in a large saucepan over medium heat. Add butter, mussels, noodles and tomato paste. Cover and simmer for 10 minutes.
  • Step 3 Stir in Mizithra and kalamata olives. Serve.

Simple and delicious. You’ll love how the olives and Mizithra work together to make this dish flavourful. Pair with a glass of white wine. Enjoy!
