I’m thinking about Spain again and all the food I get to eat there. I’m so excited that I’ve decided to make another Spanish dish. This time, it’s Chicken Costa Brava. I think this is the ultimate comfort food, which is my specialty. It’s a combination of sweet, spicy and salty. This dish is super easy to make and a nice change to your boring weekday dinners.
Ingredients
- 1 pack chicken thighs
- 1 can roma tomatoes
- 1 red pepper
- 1 can crushed pineapple
- 1 cooking onion
- 1 cup Chorizo diced
- 2 teaspoons cumin
- 1/2 cup salsa
- 2 cups kalamata olives
- salt and pepper to taste
Directions
- Combine chicken with cumin until evenly coated
- Heat oil in frying pan and brown chicken in oil
- Add garlic, onion and red peppers. Cook until soft
- Pour canned tomatoes into the pan. Add pineapples, olives and salsa
- Season with salt and pepper. Cover and simmer for 25 minutes
I absolutely love this dish. I like to add a little rice to it. The spiciness of the chorizo works well with the sweetness of the pineapple. I hope you like it!
