I’m absolutely obsessed with curry. Now if you pair cauliflower and curry together, you’ve got a match made in heaven! For a simple side dish today, I’ve decided to make my famous Curried Cauliflower and Potatoes. It’s savoury with a little bit of heat – just the way I like it!
Ingredients
- 1 large cauliflower chopped into small florets
- 6 mini potatoes halved
- 1 can chicken broth
- 2 teaspoons curry powder
- 1 teaspoon garlic powder
- 1 teaspoon chili flakes
- 1/4 melted butter
- 3/4 cup mayonnaise
Directions
- Steam cauliflower and potatoes in pan with 1/4 cup of water
- Add chicken broth, curry powder, garlic powder, chili flakes, butter and mayonnaise
- Simmer on medium heat for 20 minutes. Season with salt and pepper
