One of my favourite recipes of all time would be my baked pork chops. I make this recipe over and over again because it’s just so delicious. If you like the taste of fried chicken, then you’ll love this recipe. I’ve added steamed vegetables too for more of a healthy kick
Ingredients
Pork Chops
- 4 boneless pork chops
- 2 eggs
- 2 hot house tomatoes sliced
- 2 cups Italian breadcrumbs
- 1 teaspoon hot chili flakes
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne powder
- 1 teaspoon oregano
- salt and pepper
- 1 cup cheddar cheese
- feta cheese for topping
Steamed Vegetables
- 1/2 cup celery stalks
- 2 cups yellow bell peppers
- 4 hot house tomatoes
- 2 teaspoons balsamic vinegar
- 1 cup chicken stock
Directions
Pork Chops
- In a bowl, mix together Italian breadcrumbs, chili flakes, garlic powder, smoked paprika, cayenne powder and oregano
- In a separate bowl, beat eggs together
- Dip pork chops into the egg mixture and then into the breadcrumbs
- Top pork chops with tomatoes and cheddar cheese. Season with salt and pepper.
- Bake in oven 350 degrees Celsius for 30 minutes
- Sprinkle feta cheese on top of pork chops and serve
Steamed Vegetables
- Heat chicken broth, balsamic vinegar and vegetables in a frying pan over medium high heat for 5 minutes until vegetables are tender
